How to cook
Clean the rice and put it in a strainer, wash it under cold running water until the runoff turns clear. Put it in a pot with 4 cups broth and the olive oil. Place it on the stove and leave to boil under a lid on high heat for 9 min. without opening the lid.
Lower the heat to moderate and boil another 2 min., then turn it off and leave the pot on residual heat for another 2 min. Take the pot off the stove and leave it aside for 20 min. without opening the lid - that way the rice finishes cooking using the steam.
Smear a cake form with a little olive oil. Divide the rice in 2, leave 1 part white and place at the bottom of the form. On it, place slices of feta cheese and tomatoes.
Season the other rice part with turmeric and black pepper, put it in the form to cover the feta cheese and tomatoes. Press down on it well with your hands, so it sticks. Leave in the fridge to harden for a few hours, then take it out and invert onto a plate.
You can eat thus prepared rice as a main course or garnish. You can also prepare it the same way in smaller cake rings and serve them individually.
