Chop the leeks finely and braise them. Add the finely chopped sauerkraut and rice.
Braise until the rice turns transparent. Pour 2 cups water over it and add the spices.
Bake in a preheated 356°F (180 °C) oven for 40-60 min.
Notes: I had a leftover steak which I added to the dish, so mine wasn't vegetarian but it's amazing even without it.
