How to cook
Make a well in the flour, put a little melted butter in it plus 4/5 cup (200 g) of water and lemon rind, and use these products to knead the dough. At the end of mixing, add the remaining water and the raisins.
The dough must set for half an hour, then roll it out into several thick sheets, place them one on top of another, in a tray.
Between them, pour a little beaten egg with milk and some oil. Before baking, coat the topmost sheet with beaten egg yolk and sprinkle with sugar. Bake until ready.
