Sift the flour and make a well. Pour in the cool water and salt. Extinguish the baking soda in the vinegar and add it too.
Start kneading, while it gradually absorbs the flour.
Shape the dough into a pita and put it in a tray laid out with with baking paper. Make cuts on it with a knife, cover it and let it rest for 10 min.
Bake in a preheated 356°F (180 °C) oven for about 40 min. Take it out and cover the warm pita with a towel.
