"Kneading round loaves isn`t that hard but it does take true skill to come up with a work of art like this from regular old dough."

Ingredients

  • milk - 1 2/3 cups (400 ml)
  • yeast - 1 cube fresh
  • sugar - 2 tablespoons
  • eggs - 3
  • oil - 3 tablespoons
  • vinegar - 1 tsp
  • salt - 1 tablespoon
  • flour - 2 lb (1 kg)
  • butter - 1/5 cup (60 g) for smearing the sheets
  • sesame seeds
  • poppy seeds

How to cook

Knead a medium soft dough. Leave it to rise in a warm area, covered with a towel. Once risen, divide it into 2 parts, with 1 larger than the other. From the larger ball, roll out 4 oval sheets.

Smear them with butter and arrange them on top of one another. Cut it into 12 triangles, starting from the center but leave an uncut section near the edges.

Cut every other one down the middle, stick the uncut ones from the bottom going up. Stick the vertices of the cut ones from the bottom going up, to make the leaf. Place an oval sheet in the middle under the leaves that form it, or roll it up.

From the remaining dough for decoration, cut out letters and arrange them on top after smearing them with egg yolk and milk. Leave the pita to rise in a warm area, then bake in a 320°F (160 °C) oven about 35-40 min.
