Ingredients

  • pork shanks - 3.5 lb (1.5 kg)
  • sauerkraut - 1 large cabbage (about 4.5 lb (2 kg))
  • dill - 3 tablespoons, seeds
  • oil - 1/4 cup
  • black pepper - to taste
  • paprika - 2 tablespoons
  • chili pepper - 1, dried
  • water - 1 cup

How to cook

Wash and dry the pork shank. Make several diagonal cuts on it with a sharp knife, rub it well with a little salt, black pepper and paprika. Leave it aside.

In the meantime, cut the sauerkraut but do leave 1-2 outer leaves whole.

Oil the bottom of a pressure cooker, place a sauerkraut leaf in it and 1/2 the chopped sauerkraut. Sprinkle on 1/2 the dill seeds, crumble 1/2 the dried chili pepper and place the shank on top.

On it, pour on the remaining sauerkraut, chili pepper and dill seeds. Pour in the oil and water and cook under a lid about 30 min. after the pressure rises.

Take out the sauerkraut and transfer to a tray, sprinkle with paprika, transfer the pork shank as well and even out the sauerkraut around it.

Bake in a 370°F (190 °C) oven about 15-20 min. until ready.
