Debone the chicken legs. If you can't complete this process, you can buy already debone, skinned legs.
Cut them into bites. Don't use the skin if you're deboning them yourself.
Put them in a bowl and pour on the soy sauce, sprinkle the basil and salt. Stir well and leave in the fridge for them to take in the spices for 2-3 hours or leave them overnight.
Prepare the tray in which you'll be baking and smear it with oil.
Beat the egg in a bowl, mix together the breadcrumbs and flour in a plate.
Dip each chicken bite in the egg and then in the breadcrumbs.
Arrange them in the tray and bake at 392°F (200 °C) for 20-30 min. until they redden.
They turn out remarkably crunchy. You can add them to lettuce salad or have them as a main course with yoghurt sauce.
