Ingredients

  • eggplants - 2 lb (1 kg)
  • oil - for frying
  • salt - to taste
  • parsley - for decoration

How to cook

Cut the eggplant (best if rind isn't too dark) into long slices. Salt them.

Heat generous amounts of oil in a pan and fry the eggplant slices on both sides to a nice color. Take them out and drain, arrange in a plate and decorate with parsley.

They're good with both tomato sauce and dairy sauce with garlic. It's all a matter of personal preference.
