How to cook
Cut the meat into cutlets. Tenderize them gently and season with salt and pepper.
Roll them in flour and then in the semolina. Leave them to rest, then dip them in the beaten eggs and breadcrumbs and put them to fry in preheated oil.
Serve each bavarian schnitzel with a small lump of butter on each and garnish with potato salad. You can also use whatever other garnish you like.
