How to cook
Clean, wash and put the offal in cold water, then boil for about 30 minutes. Then, cut them into small pieces. Heat the oil in a pan and fry the onion and carrot, add the offal.
Once golden, add the rice, stock and spices. Fry for another 10-ish minutes in a pan and add hot water to cover the ingredients well, then put the dish to bake at 320°F (160°C) until the water boils out.
The topping ingredients are mixed, the tray is pulled out and the topping added.
Return to oven and bake until dressing sets.
