Pour the sugar into the a and sprinkle with water. Leave it on medium heat until it is caramelized without moving it. After caramel starts to form, shake in a circular motion without stirring.
Make the caramel to taste - if you want it darker, add more heat and lighter – less.
Then, small portions, pour the coffee and stir. Add a pinch of cinnamon, gently adding milk.
Garnish with whipped cream and a pinch of cinnamon.
