Ingredients

  • eggplants - 9 lb (4 kg)
  • peppers - 6.5 lb (3 kg) red + 4.5 lb (2 kg) green
  • parsley - 2 bunches
  • garlic - 3 heads
  • vinegar - 1 cup
  • oil - 2 cups
  • salt

Preparation

Roasted the eggplants and peppers. Peel them and cut into pieces. Salt them. Heat the oil to frying point and leave it to cool.

Mix it with the vinegar and pour this over the vegetables. Add the chopped parsley and garlic.

Stir the mixture well and distribute it into jars. Close them and sterilize for 20 min.
