Cut the pork ribs into medium-sized pieces. Peel the potatoes and carrots and cut them into crescents.
Then add oregano and stir well. Smear the ribs with this marinade and leave them briefly in the bowl for them to take in the spices' aromas.
Arrange the ribs in a tray, distribute potatoes and carrots in between them, sprinkle with salt, black pepper and savory.
Pour the rest of the marinade into the tray, pour in a little water to half submerge the ribs and cover with foil.
Bake in a preheated 392°F (200 °C) oven for 1 hour. Remove the foil and bake another 20 min. until ready, to a nice appetizing crisp.
