Wash the eggplant well and cut it into slices. Put them in a grill pan and grill on both sides until browned.

Once ready, arrange them in a plate, overlapping them slightly.

Wash the tomatoes as well and cut into round slices.

Crumble the feta cheese on top and arrange the tomatoes.

Dressing: Put the olive oil, balsamic vinegar and honey in a bowl.
