How to cook
Bake the peppers and eggplants, peel them and chop them into medium-sized pieces.
Braise the chopped onion heads. To them add the carrots and braise another 2 min.
Then add the zucchini and green onions and after another 2 min. add the tomatoes, peppers and eggplants.
Leave the dish to simmer. Salt it and serve with finely chopped parsley.
