How to cook
Clean the carrots and grate them coarsely.
Heat the oil, add the carrots and saute until softened. Add the sugar and cook another min. while stirring nonstop. Take the mixture off the stove and leave to cool.
Lay out a rectangular sheet of plastic wrap. Sprinkle it generously with coconut flakes.
Lay out the carrot dough evenly on top of the flakes.
Using the plastic wrap, roll it up.
If needed, sprinkle more coconut flakes. Leave it for about 1 hour in the fridge to harden.
Before serving, cut it into suitable pieces.
