Marinate the pork, cut into pieces, in the soy sauce and red wine for about 30 min.
Arrange in a suitable baking tray and put in a preheated 392°F (200 °C) oven.
Bake about 20 min., then add the chopped onions, leeks and peppers.
Add the marinated mushrooms, season with salt and black pepper. Sprinkle with olive oil. Bake until ready.
Serve with a glass of red wine.
