How to cook
Chop the onions finely, dice the carrots finely and saute them in a little olive oil. To them add the mince, crumbled to small pieces, and braise it.
Season with the black pepper, paprika, salt and add the tomato juice.
Add the rice and finely chopped spinach. Stir until the spinach softens and the rice turns transparent.
Remove from the stove, transfer the products to a baking tray, pour in 3 1/2 cups water and bake in a preheated 392°F (200 °C) until the rice is ready.
Beat the eggs, add the yoghurt, pour this over the cooked dish and return to the oven for it to crisp.
You can serve the dish with a spoon of yoghurt.
