How to cook
Boil the potatoes and mash them with part of the butter. Season with salt and pepper. Crumble the feta cheese and mix it with 1 egg, stir.
Distribute the feta cheese, potatoes and oil over 2 sheets at a time, wrap them into rolls.
Arrange the rolled up sheets in a tray and smear with the other egg which you've beaten well.
Turn the oven on to 390°F (200 °C) and bake the phyllo pastry about 25 min. Take it out, smear with butter and wrap with a clean towel. A superb, easy-to-make phyllo pastry!
