Ingredients

  • peppers - 12.5 oz (350 g) red, baked
  • eggs - 4
  • flour - 3 tablespoons
  • salt - 1 pinch
  • black pepper - 1 pinch

  • cream cheese - 1 cup (250 g) Philadelphia
  • feta cheese - about 3.5 oz (100 g)
  • olives - 6 without the pits
  • parsley

How to cook

Put the baked and peeled peppers in a colander to drain out their water.

In a deep bowl, beat the eggs and flour. Mash the peppers and add them to the eggs. Add the black pepper, salt and stir.

Lay out the oven tray with baking paper and oil it lightly. Pour the mixture in it and distribute it evenly into a very thin layer.

Place in a preheated 390°F (200 °C) oven and bake 10 min. Keep an eye on it because the layer is very thin and bakes quickly.

Invert the layer onto another sheet of baking paper and while still hot remove the baking paper that it baked in. Leave it to cool.

Smear it with the cream cheese and sprinkle finely chopped feta cheese on top.

Add the finely chopped olives and sprinkle a little chopped parsley. From the narrower side, wrap it into a tight roll using the baking paper.

Cover with plastic wrap and put in the fridge for 1-2 hours.

The roll is suitable as a garnish, appetizer and starter.
