Add the vanilla essence and then divide the filling into 12 equal parts. Remove the dough from the refrigerator and divide it into 4 equal parts.
Roll out each part into an 8″ (20 cm) by 11 3/4″ (30 cm) sheet, then divide each of those into 3 equal parts. Insert filling in each piece and roll it up into a roll, press to tighten the filling and dough and cut it into different shapes.
Put all of the baklavas in a baking dish and place it in the oven at 482°F (250 °C).
