Sift the flour, make a well in the middle of it and pour 2 eggs beaten with 1 tsp salt, the heated milk, brandy and sugar, then knead a soft dough.
Divide it up into 4 balls, roll out each ball onto a floured surface into a small sheet - about 8″ (20 cm) wide.
Sprinkle the 1st sheet with melted butter, place the 2nd on top, sprinkle a little butter again and repeat until you've placed all 4 sheets - don't put butter on the final one.
Roll out all the sheets together into a large, thin sheet. Beat 1 egg and mix it with the crumbled feta cheese.
Distribute this filling onto the rolled out dough and wrap it into a roll. Cut it into pieces every 1″ (2.5 cm). With oiled hands, press them and fry in generous amounts of heated oil.
