Put the tripe to boil until completely softened, while removing the foam from the surface of the water. Drain it, salt to taste and cut it into strips. Heat the butter in a pan, fry for 30 seconds and add the chopped garlic and tripe.
Serve with a glass of red wine. If you want, you can put the tripe in a clay pot and bake it for 5 minutes in the oven.
