How to cook
The turkey legs are braised evenly on all sides in half the hot oil. Once browned evenly, take off and transfer to a baking dish. Pour in the wine and soy sauce and bake under foil to full readiness.
Meanwhile, in the rest of the oil and fry the grated onion and ground garlic. Add grated or smashed tomatoes and boil them until the sauce is reduced or thickened.
NB: If you want the sauce to be more subtle, you can strain it through a fine strainer.
