How to cook
Wash the chicken and clean it. Pour on lemon juice and rub the inside and outside with salt and pepper.
Wash the livers and clean them from their membranes, then chop them finely. In 1 tablespoon of oil, lightly fry the garlic, add the livers and gently fry for 2-3 minutes. Add the diced ham and breadcrumbs.
Flavor with salt and pepper and add rosemary. Stuff the chicken with this mixture and sew it closed with thread, or pin with toothpicks.
Cover with the remaining oil. Bake covered with foil in a baking dish with 1/3 cup water for about 1 1/2 hours at 392°F (200 °C).
Then, remove the foil and bake another 10-15 minutes until it gains a golden crust.
