How to cook
In a large bowl, mix the berries with the sugar, honey, lemon peels, lemon juice and salt. Stir the sugar in well and blend it or mash it with a press. Pour the fruit mixture into a blender and blend for a few minutes until perfectly smooth.
In the same bowl pass the fruit mixture through a large sieve, stirring with a spatula. This will separate the seeds from the fruit.
Leave the prepared fruit puree in the refrigerator for 1 hour. Then, freeze for a few hours, but not too long. Serve the berry sorbet decorated with mint leaves.
