Heat the oil in a deep pan.
Peel the eggplants and dice them. Braise them. In the meantime dice the carrot and mushrooms and then add them as well.
Peel the potatoes and put them in whole.
Blend the tomatoes, prepare the the unpeeled garlic cloves, add everything and pour in 4/5 cup (200 ml) water. Boil on the stove until ready.
