Stuffed Pasta with Mince

  • pasta - 1/2 packet, large Lumaconi or Conchiglioni
  • mince - 17.5 oz (500 g)
  • onions - 1 head
  • carrots - 1
  • peppers - 10.5 oz (300 g), red, roasted and peeled
  • tomatoes - 1 bottle, canned, mashed
  • garlic - 2 cloves
  • basil
  • oil
  • salt
  • black pepper
  • cayenne pepper - if desired


Boil the pasta but not fully - a few min. less than the time listed on the packet. They need to be slightly firm.

Braise the mince with the finely chopped onions, garlic cloves, finely grated carrot, peeled and finely chopped roasted red peppers, cayenne pepper, salt, black pepper and basil.

Add the canned and blended tomatoes. Sprinkle basil generously. Season with salt.

Once boiling, remove from the stove.

Fill the pasta with the mixture and arrange in a form with removable walls, at the bottom of which you've poured 1 finger of the filling mixture.

Arrange 2 layers of pasta, put part of the mixture between them. Finish the top off with the remaining mixture and bake at 356°F (180 °C) about 25 min.

Wait to cool well and remove the walls.

Garnish and serve.
