Leave the dough to relax. Divide it into 4 parts. Roll out 1 part and smear it with oil. Sprinkle with diced cheese, salami, olives and spices of choice. Wrap into a roll. Repeat for another part of the dough. Twist both rolls and weave them together. Place them in an oiled tray.
Repeat the process for the other 2 balls of dough, this time with a filling of sauteed spinach, feta cheese and parsley. Put this roll next to the other one. Leave to rise and bake at 392°F (200 °C) about 35-40 min.
In the meantime, mash the green garlic and add the butter to it. Shortly before removing the tutmanik from the oven, smear it with the garlic butter.
