Dissolve the yeast in a little cool water and add the sugar. After the yeast activates, add it to the sifted flour. Add the salt and oil. Stir and pour a little water, then start to knead.
Slowly add water until you obtain a smooth and soft dough. Cover it with a towel and leave to rise.
Divide into 5-6 balls. Roll out each ball into a thin sheet. Arrange the flatbread in a tray laid out with baking paper and smeared with butter.
Smear the flatbread with melted butter using a brush, sprinkle grated cheese and grated feta cheese on top.
Bake in a preheated oven until golden.
Garnish each flatbread with a round slice of tomato and finely chopped parsley.
