Tender Rabbit with Potatoes in the Oven
- rabbit - 1 whole
- potatoes - 14 oz (400 g)
- onions - 2 medium - sized heads
- tomato juice - 1 cup
Start by preparing the rabbit. Cut it into small pieces and wash well.
Next, peel the potatoes and cut them up for frying. Chop the onions finely as well. Pour the potatoes and onions in with the rabbit pieces.
Sprinkle with salt, paprika, turmeric and savory. Stir everything and put it in a large tray.
Pour on the tomato juice. Cover the tray with foil. Put to bake in a preheated 356°F (180 °C) oven about 2 hours.
Baking longer at a lower temperature as listed makes it exceptionally tender.
