How to cook
You'll need small white chicken fillets. If they're thick, tenderize them slightly. Sprinkle with a bit of salt and white pepper. Leave them aside to take in the flavors.
Wash the mushrooms. Use small champignons.
Braise the mushrooms in a deep pan with a little oil. Stir and while frying, pour in flour (about 3 tbsp) to obtain the desired consistency. Stir. Add black pepper and salt to taste. Add hot water and stir again.
Lower the stove and leave to cool. Stir the sauce with the mushrooms frequently.
Smear a grill pan with a little oil. Grill the fillets on both sides in it. Don't grill too much because you'll be cooking them further.
Once grilled, put them in the sauce. Leave the dish to simmer.

Finally, sprinkle with finely chopped parsley if desired.
