Ingredients

  • potatoes - 2 lb (1 kg)
  • onions - 1 head (medium)
  • oil - 2 - 3 tablespoons (olive oil, butter)
  • mushrooms - 9.5 oz (275 g) optional
  • savory - a little, crumbled (or ground)
  • salt - to taste
  • black pepper
  • garlic - if desired
  • parsley
  • eggs - 1 for the thickening agent, optional

Preparation

Peel the potatoes, chop them coarsely, pour cold water over them, add the grated onions, chopped mushrooms, salt, oil, savory.

Once the potatoes are boiled, take them out into a bowl, mash them well and return to the soup. Leave to boil a bit more. Taste it and add the parsley.

If you'd like to thicken the soup, leave it to cool a bit for 5-10 min., then add the beaten egg.

Optionally, serve the potato soup with feta cheese or croutons.
