Put the shanks, ear and leg in a pressure cooker with water, add salt and the bay leaves.
Once the water comes to a boil, close the pot and boil 35 min.
Prepare the spices and the tray in which you'll be baking them.
Place the shanks, ear and leg in the tray, season with black pepper, paprika and garlic.
Pour in 1 ladle of the broth and put to bake for 20 min.
Take them out of the oven and serve warm with a garnish of your choice.
