Cut the pork shank into suitable slices. Clean the mushrooms and cut them into slices. Peel the potatoes, wash and dice them.
Heat the oil. Add the shank meat and potatoes. Cook while stirring nonstop for 5-6 min. Add the mushrooms. Cook another 1-2 min.
Pour the mixture into a clay pot. Pour in enough hot water to cover the potatoes. Season with salt and black pepper.
Cover with a lid and bake in the oven until the water evaporates and the dish is left in just oil. The potatoes need to have softened, and the meat needs to tear easily - at that point the dish is ready!
Sprinkle a little dry parsley before serving.
