Cut the zucchini into strips and sprinkle them lightly with salt, enough to release their water. Leave them for about 15 min. and drain out the water.
Beat the eggs with a little black pepper, pour the flour into a plate. In another plate, pour in the prepared breading and start dipping each zucchini strip first in flour, then in eggs and the breading mixture.
Arrange the strips onto baking paper or a tray, smear with oil and arrange the strips. Bake in a preheated 374°F (190 °C) oven.
