  • salmon - 4.4 lb (2 kg) Norwegian fillet
  • salt - for dusting
  • sugar
  • dill
  • pepper - crushed or ground white pepper


The salmon fillet is rubbed with a mixture of crushed salt and sugar in a ratio of 1.5: 1.
