Ingredients

  • tongue - 3.5 lb (1.6 kg) beef or buffalo
  • onions - 1 head
  • carrots - 3.5 oz (100 g)
  • celery - 1.8 oz (50 g)
  • parsley - 1.8 oz (50 g) roots
  • tomatoes - 3 - 4
  • tomato paste - 4/5 cup (200 ml) or canned tomatoes
  • salt - to taste
  • pepper - to taste
  • vinegar - 1 tbsp
  • oil - 1/3 cup (80 ml)
  • red wine - 2/3 cup (150 ml)

Preparation

Well washed tongue is boiled with a little vinegar and salt for 2-3 hours Add cleaned and coarsely chopped onions, carrots, parsley roots.

Once cooked, immediately immerse in cold water and peel. Cut into slices and fry briefly in a little preheated oil.

The tongue is arranged in an oiled tray and then add a mixture of chopped tomatoes, tomato paste, a bit of strained broth, red wine, salt and pepper.

Optionally, you can put a bay leaf and vegetables in. Bake in a moderately hot oven, while fat still remains.
