Cut the zucchini in 2, or if they're really small just cut off their tops, dig out the insides. Saute the chopped onions briefly in the oil. Add the finely chopped carrot.
After a few min. add the washed rice and pour in 1/2 cup water. Once the rice absorbs the liquid add the mince and stir to crumble it.
Season with the spices and add the chopped insides of the zucchini.
Stuff the zucchini with the filling and arrange them in an oiled tray. Pour in water (2-3 fingers high). Bake the stuffed zucchini for about 45 min. at 392°F (200 °C).
