Exquisite Chicken Legs with Vegetables in a Clay Pot
- chicken legs - 3
- potatoes - 3
- broccoli - 1 cup, stems
- peas - 1 cup
- carrots - 3
- peppers - 2, red
- tomatoes - 1
- tomato paste - 1 cup
- spices - 1 tablespoon, for chicken
- homemade spices - 1 tablespoon
- leeks - 2 stalks
- onions - 1 old
Clean the chicken legs and wash them.
Leave to saute 10-15 min., then add the tomato paste and homemade spices with 1 cup water.
Transfer everything to a clay pot, while also adding the potatoes, which you've peeled and coarsely diced ahead of time.
Place the chicken legs on top, sprinkle with the spices for chicken.
Heat up the clay pot and place it in the oven, bake about 40-50 min. on moderate heat.
Before you take it out for serving, remove the lid to allow the dish to crisp on top as well.
Serve the dish sprinkled with chopped parsley.
