How to cook
Put the oil, black pepper, paprika, savory and salt in the tray in which you intend to bake the rabbit, stir well.
Roll the portions of rabbit meat well in this marinade. Then add the chopped onions (pearl onions are even better if available), the roundly sliced carrot, garlic (whole or separated into cloves), bay leaf, allspice and black pepper grains. If you have mushrooms, add some too.
Carefully pour the water and white wine into the tray and shake slightly to mix all of the products.
Cover with foil and bake about 1.5 - 2 hours at 356°F (180 °C). Then, remove the foil, baste the meat with the sauce and bake another 30 min. until it gains a nice golden crisp.
The rabbit turns out really tender and aromatic! Enjoy!
