Ingredients

  • biscuits - 6.5 oz (180 g) tea
  • butter - 1/2 cup (120 g)
  • ricotta - 1 cup (250 g)
  • mascarpone - 1 cup (250 g)
  • yoghurt - 4/5 cup (180 g)
  • eggs - 3
  • sugar - 2/5 cup (100 g)
  • flour - 2 tbsp (30 g)
  • lemons - 1, for its juice
  • syrup
  • cherries - 17.5 oz (500 g)
  • sugar - 4 tablespoons
  • liqueur - 2 tbsp (30 ml)

Preparation

Mash the crumbled biscuits with 1/3 cup (80 g) butter until homogeneous. Spread it out in a tray onto baking paper and press firmly.

Beat the 2 kinds of cheeses, yoghurt and the eggs. Separately, mix together the sugar, flour and the rest of the butter. Now combine both mixtures while stirring and pour in the lemon juice.

Pour this over the biscuit layer. Put in a preheated 374°F (190 °C) oven and bake 50 min.

Boil the pitted cherries with the 4 tbsp sugar in water until it's nearly all evaporated. Let cool, pour in the liqueur. Pour over the cooled cheesecake.
