Ingredients

  • butter - 2 tablespoons
  • vegetable butter - 2 tablespoons
  • onions - 1 chopped head
  • sugar - 1/2 tsp
  • flour - 2 tbsp
  • broth - 12.5 cups (3 liters) beef
  • salt - 1 tsp
  • pepper - freshly ground
  • wine - burgundy or dry red wine
  • madeira - 1/4 cup, or use port
  • bread - 8 to 10 slices toasted French
  • parmesan - or gruyere cheese

How to cook

Heat the oil and fry the chopped onion with the sugar. Stir often and cook until the onions get a nice brown color. Add flour, stir briefly and add the beef broth mixed with salt and pepper.

Once it boils, reduce the heat and simmer for 30 minutes. Add the wine and transfer the Torino, making sure that it is well seasoned.

Serve the French Onion Soup with Torino with toasted bread and grated Gruyere or Parmesan cheese.
