Rub the trout fillets with spice for fish. Stir in 1 tablespoon rice flour, breadcrumbs and pepper, paprika, salt and grated Parmesan.

Stir the mixture and roll the trout fillets in it. Heat butter and olive oil with rosemary sprig in the frying pan.

Put the fish fillets in to cook on the first side with the skins and then remove them.

Fry for about 2 minutes on each side. Serve with thick slices of lemon.
